Happy Monday! Yesterday morning I ran a 10k race with Juana, one of my good friends. The race began at 9:45 am, which was pretty nice so I didn´t have to wake up too early. Sadly though, I didn´t PR, but its OK, I had fun anyway! I don´t know what my official time was, but according to my Garmin it´s somewhere around 44: 40, an average of 7:11 minutes per mile.
I wasn´t really looking to PR in this race, I took it more as a “practice” race for Nike´s upcoming 10k race which I would really love to PR. I hadn´t run a 10k race since last year´s Nike´s 10k where I PRed (42:59 minutes). Overall, the race was OK, but I didn´t love it. I started in the middle of the pack so the first mile I had to pass people and that really slowed me down, I think I did the first mile in over 8 minutes. At the same time, there was a sewage spill (ewww!!) at the beginning of the race, so we had to tip toe around the water mess. So, yeah, it wasn´t the best of races but we still had a good time. After the race finished, we grabbed some Starbucks (Soy misto for me and Strawberry frappuccino for her) and walked 3 miles home while we chatted. I spent the rest of the day relaxing with Maia and Roberto and then did some baking in the afternoon. I made some banana blueberry muffins inspired by this recipe from Sweet Tooth Sweet Life. Breakfast
Since I had some blueberries left over from yesterday´s muffins, I went with some greek yogurt bluberry pancakes this morning. I made up a new recipe and this is what I came up with (makes about 3 medium sized pancakes):
· 1/3 c oats
· 2 egg whites
· 1/3 c greek yogurt
· 2 tbsp oat bran
· Dash of cinammon
· Vanilla extract
· Baking powder
· Lots of blueberries (around ½ cup)
These pancakes came out great! Really fluffy and moist and full of blueberries, just the way I like them. I topped mine with greek yogurt (about ¼ cup) and some maple syrup. Yum!
As far as workouts go, today’s a rest Day for me! I’m playing tennis tomorrow and want my legs to be fresh. I’m off to lunch at a friend’s house. Hope you have a great week!
