Good Morning guys!
This weekend has been very relaxed, and we haven’t really done much. Yesterday night we stayed home with Maia since we didn’t have a nanny, so it was the perfect opportunity to get in the kitchen and try something new.
I bought a loaf pan a while back and had never used it, so I thought it would be a good idea to try it out and bake some bread. My culinary skills are next to none, but I love being in the kitchen so I better start somewhere.
I looked at several recipes for inspiration and came up with a delicious bread recipe I would love to share with you all! My recipe was inspired by this recipe from Sweet Tooth Sweet Life.
| Chocolate chunk raisin banana bread |
| 1.5 cups of flour |
| 1 cup of oats |
| 1.5 cups of milk (I used 1%) |
| 1/3 cup brown sugar |
| 1 egg |
| 1 banana (I only had one) |
| 1/2 cup Cadbury chocolate pieces |
| 1 tbsp canola oil |
| 1 tsp vanilla extract |
| 2 tsp baking powder |
| Handful of raisins for decoration on top |
Mix all of the ingredients together in a bowl and pour into a 9×5 loaf pan. Bake at 350 F for about 35 minutes.

The bread came out delicious, not too sweet (if you like sweeter baked goods, try adding 1/4 cup more brown sugar) and really moist. Next time I think I would put in a bit more chocolate.
I enjoyed a slice with lucuma jelly on top. I would love to try some with Peanut Butter, but didn’t have any at home.
Workout
Yesterday morning I did my 10 mile run at a little less than 9 min per mile pace. I read this interesting article from Runner’s World before my long run, so I ran at a slightly slower pace than usual. I used to run my long run faster, and was always worn out, but after reading the article I learned long runs are supposed to be slower runs (30 – 90 seconds slower than 10k pace). I felt really confortable during the run and hopefully will feel that way at next weekend’s race!
On today’s agenda: Lunch at my parent’s house and an early movie night with the husband.
